The Road to Las Vegas is Paved with Terracotta

Hi everyone, I started this post back in June 2008 sometime after returning from a industry trade show in Las Vegas. While driving we stopped in various locales for fresh local food and utilized our Green cookware, sometimes literally on the side of the road to prepare our own fresh cooked dinners. Fast food and chain restaurants are not the only option when driving around our magnificent country. Italian Recipes from

Ma D’s Shrimp Sauce

(my families Christmas Eve pasta sauce,)
but I cook it whenever I get the urge

Makes 6 servings.

1 1/2 lb large raw shrimp, cleaned, shelled & de-veined
1 small yellow onion finely chopped
2 tablespoons very finely chopped carrot
1/2 cup finely chopped celery
18-24 Sicilian green olives, halved & pit removed
1/4 cup capers
(optional teaspoon of anchovy paste or 2-3 anchovies)
2-3 tablespoons Extra Virgin Olive Oil
2—28 ounce cans of crushed tomatoes
Salt and pepper to taste

Heat Extra Virgin Olive in Piral Terracotta pan
( I suggest the TA272ARCR-C, 4 1/2 Quart casserole/saucepan, shown below)


add the chopped onion, carrot & celery
add salt and fresh ground pepper and red pepper flakes if desired
after approximately 2 minutes add the pitted / halved green olives and capers
(and optional anchovies)
cook slow and evenly for 3-5 minutes till onion, carrot, celery, caper and olive mixture soften
add 2 cans of crushed tomatoes and let sauce cook 15-20 minutes
add salt, pepper to taste



Boil water for linguine or spaghetti cooked al dente, mix with sauce in serving platter
and enjoy!
